Sept 03: Mumbai’s dining scene is seeing a shift in how people discover and connect with restaurants. Beyond the food and the space itself, diners are interested in the people behind the restaurant, their journey, their vision and what makes their approach different. This has given rise to a new generation of chef-led and founder-driven restaurants where the story behind the table is becoming just as important as what is on it.
One such story is that of Jawairia Merchant, Founder of Thai Naam, whose journey in food began at a young age. What started with experimenting in the kitchen and participating in cooking competitions eventually grew into a deeper passion for the craft. She began training with chefs while still in school and went on to build Thai Naam with a clear focus on authentic Thai cuisine and the traditions behind it. Her journey reflects a generation of young restaurateurs turning personal interests and experiences into businesses with a strong sense of identity. For Jawairia, that identity has always been closely tied to her love for Thai cuisine and her desire to share it with Mumbai.
With the support of her father, Anis Merchant, who has also been closely involved in shaping the restaurant and its details, Jawairia has grown Thai Naam into a space that brings together Thai flavours, culture and warm hospitality. She remains personally involved in the restaurant’s food, operations and overall guest experience, while also bringing her own perspective to the way the brand evolves. From the details of the restaurant to the experience guests have at the table, her involvement has remained an important part of Thai Naam’s journey. It is this hands-on approach that has allowed the restaurant to grow while staying rooted in the vision with which it began.
Her journey has been recognised across the industry, with Thai Naam receiving multiple Times Food & Nightlife Awards, while Jawairia herself has been recognised as an ET F&B Leader, ET Inspiring Women Leader for Global Culinary Experiences and Chef of the Year at the Times Food & Nightlife Awards 2026. These recognitions reflect not just the restaurant’s growth, but also the space young restaurateurs are increasingly creating for themselves within Mumbai’s hospitality landscape
As diners look beyond simply choosing where to eat and seek restaurants with a story, a point of view and a person they can connect with, young chef-led restaurants are finding a strong place in Mumbai’s evolving dining scene. Links: Instagram - Jawairia Merchant | Thai Naam Website - Thai Naam
